Cupcake Snowmen
For our celebration with family I made these cute little cupcake snowmen. Just some vanilla bean cake and vanilla frosting covered with coconut and a marshmallow for a head. When I added the eyes, nose, mouth and pretzel arms they came to life. Almost too cute to eat... almost!

Chocolate Peppermint
I have been waiting to make these cupcakes until it got closer to Christmas, and I was so happy to finally make them. I made a yummy chocolate cupcake and topped it with peppermint buttercream frosting and sprinkled crushed candy canes on top. They look pretty and taste delicious!

Tiramisu and Orange-Raspberry
Last Friday I made two "specials of the day" Tiramisu was the first one. It was something that I always wanted to try but had never done before. The cake was a vanilla bean lady finger with Kahlua and coffee syrup brushed on to soak in. Finally I topped them with a marscarpone cheese and whipped cream frosting and dusted them with cocoa powder.
My next cupcake was a Orange flavored cake with Raspberry vanilla buttercream frosting. The two flavors went well together and it was very popular!

Blueberry Muffins
Yesterday was a cold and rainy day, so I decided to bake some yummy blueberry muffins to warm us up. The recipe I used called for buttermilk, but since I didn't have any I used eggnog instead. The eggnog was a great addition, and they turned out so moist and tasty! The brown sugar crumble on top was just right!

Pistachio Cream
When I was growing up, my Grandma used to ask me what type of cake I wanted on my birthday... I always answered "Pistachio!" I have made this cake numerous times over the years, but I had never made it into a cupcake before, but I thought that it would be great. The cake itself has pistachio pudding in it, which makes it so moist. As well as the frosting which is made with the pudding and whipped cream. Everyone who tastes it says that the frosting is perfect because it is so light and fluffy and not too sweet. I hope that everyone loves them as much as I always have!

Pumpkin Chocolate Chip Muffins
On Sunday I decided to try making some pumpkin muffins... Not just any pumpkin muffins, I added in some semi-sweet chocolate chips and topped them with raw sugar and pecans to make them extra special. They turned out so great! They were really moist, and since I used my jumbo cupcake pan they were huge!

Smores
I have been trying to come up with a way to make the perfect Smores cupcake. Today was the day! I started out by making a cinnamon vanilla cupcake and put a chunk of milk chocolate in the middle. While the cupcakes were baking I added a couple of mini marshmallows to the top. When they came out of the oven, the marshmallows were all puffed up and toasted. I then topped them off with chocolate buttercream frosting, and for decoration I added some more mini marshmallows, chocolate, and a cute teddy graham. Delicious!
