Pumpkin Chocolate Chip Muffins

On Sunday I decided to try making some pumpkin muffins... Not just any pumpkin muffins,  I added in some semi-sweet chocolate chips and topped them with raw sugar and pecans to make them extra special. They turned out so great! They were really moist, and since I used my jumbo cupcake pan they were huge!

Smores

I have been trying to come up with a way to make the perfect Smores cupcake. Today was the day! I started out by making a cinnamon vanilla cupcake and put a chunk of milk chocolate in the middle. While the cupcakes were baking I added a couple of mini marshmallows to the top. When they came out of the oven, the marshmallows were all puffed up and toasted. I then topped them off with chocolate buttercream frosting, and for decoration I added some more mini marshmallows, chocolate, and a cute teddy graham. Delicious!

Pumpkin Spice Cupcakes

This time of year I always find myself craving anything with Pumpkin in it.  So I decided my "special" today would be Pumpkin Spice cupcakes.  I made a spiced vanilla cake and topped it with a Pumpkin cream cheese frosting, it was a perfect combination. I think thhis cupcake was a great success... I sold out all 24 cupcakes, and I already have orders for 3 dozen of them for Thanksgiving next week!

Cranberry-Orange Scones



I have always wanted to try making scones... today I was up very early so I gave it a try. They turned out great! I love the way cranberry tastes with orange, so I chose to start with that flavor, but they would be good with many different things mixed in (I think I will try chocolate next). They were crisp on the outside, and very soft and moist on the inside. Great for breakfast or dessert, and a perfect addition to a cup of coffee.

Cupcake Cakes

Today I made these little "Cupcake Cakes" for a birthday party. The pink vanilla bean cake is topped with pink and green buttercream frosting and decorated with assorted candy. This was my first attempt at making these,  I think that they turned out pretty cute.

Double Chocolate Minis

Yesterday I baked 5 dozen double chocolate mini cupcakes with vanilla bean buttercream frosting, for  a little girl's 9th birthday. These cupcakes are so moist and chocolatey, and the frosting is so rich and creamy! They were a perfect size for her to share with all of her friends after school.
