Hello Kitty


I was asked by my sister in law to create some Hello Kitty cupcakes for my niece's 4th birthday. I thought like it sounded like a cute idea so this is what I came up with. I just made a simple vanilla cake and topped it with vanilla frosting. I had to give my normal swirl of frosting a little smoothing out so that I could decorated it. I used bubble gum tape for the bow, and black decorating gel for the eyes and whiskers. For the kitty's cute little nose I just used a small piece of yellow fondant. They turned out so cute, and they were a huge hit at the party!

Bird Nest Cupcakes


I thought that this was a sweet and festive idea for Easter. They turned out really cute! With a toasted coconut nest and jelly bean eggs these cupcakes look just like a little bird nest. These were made with yellow buttermilk cake and swiss meringue buttercream frosting, but they can be made in any flavor that you like. 

Key Lime Pie Cupcakes


I am a big fan of key lime pie, so these cupcakes were ones that I was very anxious to try. I made a simple vanilla cake with a hint of lime zest, and then filled the inside of the cupcake with a key lime filling. They were topped with a super light and fluffy meringue topping. A delicious treat for any key lime pie lover!

1st Cake

My children and I love to watch "Cake Boss", the cakes that they make are always so nice! Using the show for inspiration I decided to give it a try for my daughter's 5th birthday. Let me just say that they make it look much easier on TV. I like the way that this cake turned out, but I know that it could be much better! It was very difficult to smooth the fondant over the cake, my cake underneath wasn't a smooth surface so I think that was my problem. I think that I will try this again and learn from my mistakes.

Carrot Cake

I have had many requests for carrot cake, but had never made it before.  I found this great recipe and had to give it a try. I was very happy with the way that they turned out, the cake was so moist and delicious and it was just right with the cream cheese frosting!

Chocolate Cherry

My daughter loves maraschino cherries, so I came up with this recipe for her birthday. It was a chocolate devils food cupcake with a cherry whipped cream filling and topped with cherry buttercream and a cherry on top!

Cupcake Snowmen

For our celebration with family I made these cute little cupcake snowmen. Just some vanilla bean cake and vanilla frosting covered with coconut and a marshmallow for a head. When I added the eyes, nose, mouth and pretzel arms they came to life. Almost too cute to eat... almost!
